hi kids!
It's been a while since my last update. Some news/happenings:
1. I have officially accepted my place in the full-time MBA program. Plus: my sister was accepted @ Iowa and we are rooming together! We're looking for a place now. :D
2. I have been rocking lunch-hour workouts with Megan (step class!) on a regular basis (3x a week at least).
3. I have started adopting vegan recipes into my diet, and I've been eating 90% vegetarian for the past month or so. I will occasionally have fish and sometimes chicken, but I've been staying away from red meat and moving toward a no-meat diet. I just can't deal with the gross-out meat anymore. I will still eat meat sometimes for now, but just not nearly as much. This will be a gradual process as I learn how to cook differently.
Number One thing I've noticed since eating this way: My digestive system has fixed itself. I have had bowel/IBS problems that have been getting worse and worse over the past few years (I don't think the stress and lack of sleep has helped). Since I've been eating differently, I've been eating healthier proteins and fiber, which must be part of the reason I feel so much better lately.
Tonight's meal: fried tempeh with broccoli, red pepper, carrot in a peanut sauce. yum.
I'm doing this for two reasons:
#1 To get away from eating bad food. By eliminating meat, I have to cook for myself a lot and it forces me to make better meals, more creative ones too.
# 2 To stop eating the fuzzy little animals which are cooped up in factory farms. I've been doing a lot of reading on this subject lately, and it has encouraged me to actually make the move.
We'll see how long this can last, but I am happy with it right now.
